Event Spotlight: Auburn’s Woltosz Football Performance Center Grand Opening Gala

A big dream was realized for Auburn University with the unveiling of the Woltosz Football Performance Center. The 233,428 square foot center houses both indoor and outdoor practice fields. Tigers Unlimited marked the opening of this impressive $92 million facility with an equally impressive grand opening gala.

The 85 Auburn families who donated to the project attended this luxurious event where our POP team had the opportunity to be a part of this major event, serving up a plated menu featuring:

Passed Appetizers

• Mini Lobster BLT – poached lobster, applewood bacon, micro arugula, tomato, lemon aioli
• Grilled Lamb Lollipop – green harissa
• Smoked Corn Fritter – tabasco aioli
• BBQ Chicken Skewer – Doux south mustard

Plated Dinner & Dessert

• Warm Dinner Rolls – whipped butter
• War Eagle Wedge Salad – baby romaine, smoked cheddar, lardon, heirloom tomatoes, radish, green goddess
• Braised Short Rib and Pan-Seared Sea Bass – wild mushroom risotto, charred pickled carrots, micro arugula
• Dark Chocolate Cake – orange mirror glaze, puffed rice crunch and blue anglaise
• Spiced Pecan Caramel Cheesecake – bourbon Chantilly cream
