Our very own, Jeremy Campbell, director of the golf division at Atlanta-based caterer Proof of the Pudding, sat down with the Charlotte Business Journal to discuss how he will lead an army of 600 people charged with feeding 10,000 corporate VIPs, the golfers and the caddies at the Presidents Cup at Quail Hollow.

The centerpiece of the caterer’s arsenal: a custom-built, 26-foot, 1,000-gallon, 6,500-pound smoker that will be onsite. Along with two smaller smokers, Proof of the Pudding will be able to smoke as much as 3,000 pounds of brisket, pork and chicken at the course each day!
