ATLANTA — May 26, 2026 — Proof of the Pudding, national chef-led hospitality group serving events from intimate celebrations to stadium-scale productions, announces that Jon Lavallee has joined the executive leadership team as Chief Operating Officer.
In this role, Jon will lead operational strategy and scaling initiatives across Proof’s portfolio while strengthening client relationships and a personalized partnership approach that defines the company’s service model. His appointment to COO underscores Proof’s growth trajectory in the sports, media and entertainment sectors, where the company serves convention centers, sports venues, collegiate athletics programs and major event properties across North America.

With over 25 years of operational and financial leadership experience, Jon brings expertise to scaling enterprises and driving measurable results across competitive markets. Most recently, he served as Chief Operating Officer (2023-25) and Chief Financial Officer (2016-23) for On Location & IMG Events, where he oversaw all aspects of operations, financial strategy and M&A activity. During his tenure, the business achieved significant growth in both revenue and EBITDA. At On Location, Jon partnered directly with rights holders, including the NFL, NCAA, PGA and the Rose Bowl, and spearheaded multiple M&A transactions including the company’s sale to Endeavor in 2020.

Before On Location, Jon was an operating executive within Carlyle’s middle market growth fund, leading operational transformations for portfolio companies across sectors. Throughout his career, he has managed P&L responsibilities exceeding $750M and led organizations with more than 500 employees, known for data-driven decision making and leadership aligned with CEO and board objectives.
Proof also recently announced that Ben Witte, who has served as Chief Operating Officer, is transitioning to a new role as Chief Relationship Officer. In this capacity, Ben will continue to support Proof’s strategic growth and deepen existing partnerships, allowing the company to sustain the hands-on approach that has defined its service model.
