A progressive dinner is an event designed to be remembered. It’s an immersive, highly personalized, multi-course chef-designed meal with ever-changing scenery, unique flavors and gourmet storytelling.

Our most recent progressive dinner was designed by Chef Vagn and Proof of the Pudding Chairman Phil Noyes.


First Experience – POP Showroom

Cheese & Charcuterie Wagon

Upon guest arrival, they were immediately greeted with a drink option and bountiful charcuterie cart that included a massive grazing board filled with artisan cheeses, a variety of Italian cured meats and breads for dipping and pairing. The open setting of the POP Showroom created a chance for guests to mingle and break bread together—symbolizing the start of an unforgettable meal and experience.

Second Experience – POP Tasting Room

Sea Bass with Forbidden Rice

The story of forbidden rice began in ancient China, where it was also referred to as “emperor’s rice.” This type of rice was solely consumed by the emperor and the political elite. Throughout the years, it has reached every corner of the culinary world, but it still upholds its history as a prized commodity.

The Forbidden Rice was paired with Lemon Crusted Sea Bass with Tarragon Mousseline Sauce and served with a Crisp Artisan Lettuce Salad topped with Pear and Cranberry Croutons and Vidalia Onion Dressing.

This course was complemented with a puff pastry in the shape of a fish created by Chef Vagn. The mold used to create the pastry was a gift from a past culinary mentor of his.

Third Experience – POP Kitchen

Australian Wagyu & Dessert Rhapsody

Wagyu is one of the most prestigious and tender meats in the world. The Australian Wagyu served could be traced back to their birth in the Australian Outback. Wagyu cattle are treated with the highest respect and are quite pampered to ensure they grow to the standards needed to uphold the wagyu criteria.

The highly marbled and flavorful steak was paired with a Turmeric Carrot Medley, Woodsy Mushroom and Calvados Demi.

For dessert, guests enjoyed the culinary harmonies inspired by the one and only Freddie Mercury. Freddie was the creator of many famous rhapsodies—epic combinations of highly contrasted moods, colors and tonality. Chef Vagn created a Dessert Rhapsody exploding with different flavors and textures, served smoking.


Final Experience – POP Meet Locker

Guests ended the progressive dinner in the POP Meet Locker, which is the same space Proof of the Pudding employees enjoy their daily lunch and are able to take a break and decompress during the workday. Guests enjoyed coffee, tea and petite pastries while processing the evening and sharing last thoughts, inspirations and stories that the progressive dinner ignited.

In conclusion, a progressive dinner is a unique and unforgettable experience that combines culinary expertise, storytelling and immersive environments to create a one-of-a-kind dining adventure. Chef Vagn and Proof of the Pudding Chairman Phil Noyes brought their expertise to bear in creating a truly memorable dining experience with their latest progressive dinner. From the bountiful charcuterie cart in the POP showroom to the dessert rhapsody in the POP kitchen, guests were treated to a series of delicious and unforgettable courses. And, as they processed the evening and shared their thoughts and stories, they were reminded of the power of food and dining to bring people together in meaningful ways. All in all, it was a night to remember and an experience that will be cherished for years to come.
