Summer Winds Down, Fall Brings Dreams of Warm & Comforting Food

There is a bounty of savory soup ideas; such as filling an Acorn Squash with a creamy pumpkin soup is simple to prepare and delicious to eat. Surround the squash bowls with an Arugula Apple Slaw and heaven draws closer. The crunchy, peppery greens and tart apple are the perfect contrast to the silky smooth pumpkin soup.

Autumn harvest days may be filled with the warmth of kitchen and the gathering of friends and family. Cooler days have us longing for the comfort of warm and hearty foods. Dust off those crock pots and wipe off your Dutch ovens for a fall full of comfortable happiness and a belly full of savory satisfactions.

Acorn Squash bowls are well suited for many fall soups. Children and adults alike delight in having their bowl and eating it to!

Try filling acorn squash bowls with your favorite pumpkin soup. Fill them with beans and corn (the sacred three sisters) for an American harvest favorite served for thousands of years. Splash them with a little taste of fall enchantment, maple syrup and watch the delight. Soups and stews, chilis and goulashes, the fruits of fall inspire meals that surround us like a warm blanket. Acorn Squash Preparation Tip- to make a squash bowl simply cut an acorn squash in half for small bowls or cut the top inch off for a large bowl. Cut a thin slice off the bottom of the acorn bowl so that it will sit without rocking. Clean out the seeds and fiber strings that surround them using a spoon or melon baller. Brush the inside with olive oil and sprinkle lightly with salt and black pepper... Place the squash skin side up on a baking sheet. Bake in a per-heated 400 degree oven for 45 minutes to an hour. Make sure the squash is softened. Cook times will vary per size of the squash. Now fill with your favorite pumpkin soup.

The finest of Atlanta's Chef's gather every year to satiate the most discerning palates and hungry beasts for Zoo Atlanta's annual 'Beastly Feast' - Zootopia. Zoo Atlanta supporters gather to celebrate the unity of humans and wildlife on planet Earth. 'Zootopia' starts the evening out with a stroll through Zoo Atlanta, feeding selected animals and fueling the humans with some fabulous eats. This introduction to Zoo Atlanta's animal feeding program allows humans to interact directly with the animals.

The Ford Motor Company Fund and Patricia L Dickey have joined to make the 'Beastly Feast' one of Atlanta's premiere events of the spring. Ford Motor Company Fund has long been a supporter of Zoo Atlanta and partnered to help make it one of the consummate leaders in the world of human and animal interaction.

The Chef's of Proof of the Pudding dive into the beastly evening of adventure with a fabulous starter plate. Fans will need all the energy they can muster as the SEC is college football's most competitive conference. Proof of the Pudding is known to sate the palates of those hungry Bulldog fans, serving awe-inspiring game day delights for the Premium seats including the SkySuites, Champions Club and the SkyClub.

Chef Jonathan Cheatam wows the crowds in the Premium seats with his Pasta-bilities. A sumptuous bounty of Farfalle, Penne and Tri Color Tortellini served with Bolognese, Alfredo and Marinara Sauces. For creating your Bulldog victory platter there is a Toppings Bar which includes fresh grated Parmesan cheese, chopped scallions, sundried tomatoes, chopped bacon, broccoli and cauliflower florets and grilled chicken strips. All served with fresh warm Italian garlic rolls and breadsticks.

Farfelle pasta has the shape of a little bowtie dressing up your plate. Penne is a favorite for those who like extra sauce as its ends act as a scoop picking up a little extra sauce with every bite. Earth Day 2012 marks the 42nd Earth Day Celebration

Atlanta celebrates this day with a downtown cleanup, Beltline garden starting party and many other earthy gatherings. Proof of the Pudding lives the Earth Day promise everyday. Since its founding Proof of the Pudding has taking great strides in living with the earth by incorporating green practices in every step of their business from using earth friendly paper in the office to recycling cooking oil and composting.

Executive Chef Vagn Neilson takes great pains to source locally farmed products straight to the plate. Naturally raised organic meats and sustainable seafood are always on the menu. Fried Green Tomato Slider

For a shout out from the south, a whisper from 19th century northern farmers and the spirit of Aztec culinary delights comes the 'Fried Green Tomato BLT'. From early spring impatience for the ripening of the tomato, to the last unripened fruits saved from the frost in fall, the Fried Green Tomato has graced many a southern table for the last 100 years or so. Today all across the country fried green tomatoes are popping up in sandwich combinations with the BLT slider at the top of the charts.

In the 1500's the Aztecs and other Native Peoples introduced Europeans to the art of encrusting green tomato slices with corn meal and frying. Northern farmers in the 1800's US popularized the Fried Green Tomato in both Jewish and Dutch farming communities when unripened tomatoes needed harvest before the fall frosts. Noted culinary writer John Cowan even included a recipe in his 1870 cookbook 'What to Eat and How to Cook It', a New York favorite.

The South is where the Fried Green Tomato has found its home. Chef David Bidwell of Proof of the Pudding has been wowing folks gathered for Atlanta Meetings with his Fried Green Tomato BLT sliders. These bite sized explosions of flavor make one instantly feel at home. Fried Green Tomatoes graced with a sultry Tombs County Vidalia Onion Slaw and finished off with apple-wood smoked bacon have been known to invoke visions of catfish jumping and a bit of easy living.

Spring's Fresh Dishes

We are very pleased to announce the introduction of our new spring menu! For your Atlanta corporate events, our professional chefs have prepared a delightfully diverse flavor combination of dishes to enhance and excite your clientele's experience.

Starting off with our passed appetizers, we present five lovely options including a PLT Bruschetta with Pancetta, Tomato, and Cabbage Slaw served on a Baguette. To continue the Italian flavors we have readied a Provencal Prosciutto wrapped Asparagus with Tarragon Aioli. A Beef Sirloin piece, as well as a Shrimp wrapped with Angel Hair Pasta paired with a Walnut Pesto, and Deviled Eggs with Truffle Oil and Chives wind out our openers.
For our main dishes, we are offering these succulent servings: Free Range Chicken and Ginger Broth grilled Skirt Steak with Salsa Verde. Yum! To reach the sweet taste buds, we have included a Glazed Ham with Apricot Mustard Sauce and Pineapple Chutney.
The accompaniments to our entrees bring a healthy and delectable pairing. Spring Orzo Pasta Salad with Asparagus, a Spinach Salad containing Sundried Tomatoes and Artichokes, as well as Avocado and Grapefruit will engage the palate. A mouthwatering Shallot Vinaigrette Spring Pea mixture with creamy Flageolet Beans flavored with Mint will also be offered, in addition to an Asparagus Sauté and Pea Pod Salad.
The desserts we have included in our menu to complete the culinary experience have a light yet luscious verve. Sorbet Shooters of Mango, Raspberry, and the ever popular Bellini will be available to chill and thrill. Berry Shortcake Parfaits created for the cake lovers out there are Angel Food Cake, Vanilla Bean Crème, and sumptuous Macerated Berries with Grand Marnier!

Sesame Seared Atlantic Salmon Over Local Grown Mixed Greens

Savoring this salad is a breeze with the helpful hands of skilled Chef Doug Kieley
The base of this nutritious and delicious salad is a variety of fresh local grown greens.
He tosses them together and serves the mixture on a chilled plate to preserve the
crispness of the salad while the salmon is being prepared.
Chef Doug Kieley heats the sauté pan to a sizzling temperature. As the pan readies,
he coats the marinated Atlantic salmon with sesame seeds. Adding a small amount of
sesame oil to the pan assists in providing the perfect texture on the surface of the
filets.
Searing the salmon seals in the intricate flavors. A few more minutes in the pan and it
is done. Now he is ready for the dressing.
The ginger sesame vinaigrette is prepared to enliven the palate with an Asian flair,
and to complete the dish. The chef drizzles the dressing over the pan seared salmon
salad. A lively tangy completion to a salad that looks as good as it tastes.
A medium body white wine such as a Pinot Grigio would pair well with this dish.
